Bambola Heads to Spain for the Summer, Expat Expands at Home

Bonhomme Hospitality Group is thrilled to announce two exciting developments for summer 2025.

This season, Bambola travels to Spain for a seasonal pop-up at Casa Beatnik Country House, Bonhomme’s boutique hotel in Galicia’s Rías Baixas wine region. Recently awarded Two Michelin Keys, Casa Beatnik is one of 12 hotels in all of Spain to receive this exceptional recognition.

At Casa Beatnik, Bambola joins Tribu, the hotel’s Galician restaurant led by Michelin-starred chef Marcos Campos. Together, they offer guests two distinct and complementary dining experiences. While Tribu is a love letter to Galicia’s land and sea, Bambola brings a new dimension to the property, celebrating the rustic elegance of Italian cuisine, the exotic spice of the Silk Road, and the elemental beauty of fire cooking. Every dish is crafted with ingredients harvested daily from the estate’s gardens and sourced from Galicia’s top purveyors.

At Bambola, guests are invited to dine in a variety of unforgettable settings: long vineyard dinners beneath Albariño vines, leisurely lunches by the pool, and vibrant meals in a fire-lit dining room that opens directly onto the kitchen and surrounding gardens. It’s a transportive, sensory experience designed to ignite connection, from the first flame to the final bite.

Meanwhile in Chicago, Expat is expanding into Bambola’s West Loop space, offering a larger, more energized version of the neighborhood hangout guests have come to love. Known for globally inspired comfort food, natural wines, and weekly DJ residencies featuring some of the city’s most exciting music producers, Expat sets the tone for spirited happy hours, irresistible dishes, and spontaneous late-night escapes in the Fulton Market District.
